Makhana (fox nuts or lotus seeds) is one of India’s favourite healthy snacks. It is light, crunchy, naturally gluten-free and takes on almost any flavour you add. Best of all, these snacks take just 10 minutes with a pan and a few kitchen basics.
Start with good makhana. Big, white, well-popped pieces like our Export Quality Makhana roast evenly and stay crunchy for longer.
The basic method (for every recipe)
- Heat 1–2 teaspoons of A2 ghee in a heavy pan on low flame.
- Add 2 cups of makhana and roast for 6–8 minutes, stirring often.
- Check one piece: it should break with a crisp crunch. If it feels chewy, roast for 1–2 minutes more.
- Switch off the flame and add your seasoning while the makhana is still warm.
1. Classic ghee-roasted salted makhana
The simplest and most loved version.
- 2 cups makhana, 2 tsp A2 ghee
- ½ tsp black salt or regular salt
- ¼ tsp freshly crushed black pepper
Roast, then toss with salt and pepper. Perfect with evening chai.
2. Masala makhana
A tangy, spicy twist for chaat lovers.
- ½ tsp red chilli powder, ½ tsp chaat masala
- ¼ tsp turmeric, a pinch of hing
- Salt to taste
Add turmeric and hing to the warm ghee first, then roast the makhana in it. Finish with chilli powder, chaat masala and salt.
3. Gud (jaggery) makhana
A sweet treat kids love, with no refined sugar.
- 2 cups roasted makhana
- ⅓ cup grated jaggery, 1 tsp ghee
- A pinch of crushed green cardamom
Melt jaggery with ghee on low flame until it bubbles. Add cardamom and the roasted makhana, toss quickly to coat, then spread on a plate to cool and crisp up.
4. Makhana chaat
A fresh, no-fry snack that works as a light meal.
- 1½ cups roasted makhana
- Chopped onion, tomato, cucumber and coriander
- Lemon juice, chaat masala, roasted peanuts (optional)
Mix everything just before serving so the makhana stays crunchy.
5. Dry fruit makhana trail mix
A power-packed mix for office, travel or school tiffin.
Lightly roast the cashews in the same pan, mix everything and store in an airtight jar.
Tips for perfect crunchy makhana
- Always roast on low flame. High heat browns the outside but leaves the inside chewy.
- Let roasted makhana cool completely before storing.
- Store in an airtight glass jar. It stays crunchy for 1–2 weeks.
- If it turns soft, simply dry-roast for 2 minutes and it is crisp again.
